This is great comfort food, when it's -30C outside one needs something to keep the insides warm.


Ingredients

Makes 6 servings

  • 80g Asiago Cheese
  • 80g Old Cheddar
  • 50g Parmesan
  • 250g Mascarpone (or cream cheese)
  • 2 cups of milk (add more if you like it runnier)
  • 4 sprigs of fresh thyme (be generous)
  • Pepper (to taste)
  • 2 cloves of garlic (crushed but whole)
  • 400g Pasta (I like shells because they hold the cheese well)
  • 500g Cod cut into large bite sized pieces

Preparation (Some HTML is OK)

1. Preheat oven to 350F.

2. Cook pasta until al dente.

3. While the pasta is boiling, in a separate pot, combine all of the cheese, thyme, pepper, garlic and milk. Cook over a medium heat, stirring frequently, until all of the ingredients are blended.

4. Once your pasta is done, strain and put it back in your pot. Add cheese mixture making sure to remove thyme and garlic cloves, stir to coat.

5. Pour half of the pasta mixture into an oven proof dish. Lay cod evenly over the pasta and cover evenly with remaining pasta. Cover with foil and put it in the oven for 12 minutes.

6. Remove foil and broil for another 5 minutes or until the top becomes crusty and brown.
