Easy peasy kinda chips that are always a winner. They don't use much oil so could almost be called healthy too.


Ingredients

Makes 4 servings

  • Potatoes (either big new potatoes or smallish maris piper types) - 3-4 per person depending on size
  • 1 tbsp olive oil
  • salt and pepper

Preparation (Some HTML is OK)

Scrub the potatoes if necessary first. Don't peel them - leave the skins on. Cut the potatoes lengthways into 4. Place the potatoes in a big pan and cover with cold water. Add some salt. Cook from cold for 15 minutes. Drain and leave to cool for at least 1/2 hour in the colander. When they are coolish, pour on a couple of slugs of olive oil and toss the oil through the potatoes until they are fully covered - use your hands!. Pour the chips into a wide baking tray and put on some freshly ground salt and pepper. (1 teaspoon of paprika works well at this stage too if you fancy it.)
Put the roasting tray in a pre-heated oven at 200'c (220 non-fan) and cook for 30-40 mins until nicely brown and crisp.
